Sacratomato 2017 Salsa Competition

Saturday, July 22nd contestants will compete for BEST SALSA on stage at the Sacratomato Festival at the Sutter's Fort Historical Park.

About the contest:
Pre registration is required for all contestants.
A maximum of 6 contestants will be accepted into the contest— No entries accepted on contest day
Contestants will have a total of 20 minutes to complete their Salsa
Tasting will be limited to judges. Contest will be a blind taste test by the qualified panel judges.
Tasting by the public is not permitted.

Water
Jalapeños
Cilantro
Limes/Lemon


What you’ll need to bring:
Your best tomato salsa recipe
Your ingredients (if more than what we’ll be providing) must be approved

Winners will be announced at the main stage after judges have tasted all salsas and have had time to deliberate.

RULES 1. $25 entry fee must be paid prior to event date. Please send check made out to: Midtown Business Association to 1401 21st St Unit A, Sacramento, CA 95811 2. Contest limited to one person on stage. 3. Fresh or Home Canned ingredients cooked or prepared from scratch. Use of commercially prepared, purchased spices is allowed. 4. Only 3 ingredient allowed to be brought from from. 5. Salsa MUST be prepared on site. NO EXCEPTIONS. Marinating, smoking, or basting of vegetables and fruits prior to the preparation time IS ALLOWED. 6. Each contestant will be allotted 20 minutes to cook or prepare Salsa. 7. Team must prepare one (1) quart for judging. 8. One (1) table, tablecloth, and electricity will be provided per team. Ingredients and any other cooking utensils, equipment, awnings, etc., other than the ones provided by the Sacratomato Festival, to be provided by contestants. 9. A numbered “Judging Container” will be provided to team for submissions. 10. No glass allowed in cooking area. 11. ABSOLUTELY NO food to be served to the public. This rule is according to the State of California health code regulations. 12. Decision of Judges is final. 13. Chips will be provided to have consistent criteria for judging. 14. Contest day announcements take precedence over any previously printed or published rules.
