We are so excited to offer this program for aspiring manufactured food and value added producers in Albuquerque, NM. Our Food Business Training Program was designed to create opportunities for food entrepreneurs who have great ideas, but don't have a lot of financial capital, to explore and experiment with food business concepts to determine what a viable food business looks like for you! We require all product concepts developed at Three Sisters Kitchen to include at least one locally grown or raised ingredient. We are happy to connect you with our network of farmers, ranchers, and producers to find local ingredients for your products.
Our program requires a significant commitment - 6 hours of training per week for 15 weeks - as well as additional time to evaluate the program and help us make it stronger. We see you as partners in learning - we are excited to share our curriculum with you, and look forward to learning together what works and what can be improved. In order to ensure that the program is affordable and accessible, we are committed to raising the bulk of the funds necessary to cover training program costs. If you are selected to participate, you will be responsible for $200 of the tuition, the remainder will be covered by Three Sisters Kitchen and our supporters. We expect all participants to prioritize program participation, attend all sessions, and give us honest feedback. Program graduates will be eligible for low interest loans through our Co-op Capital program, continued Commercial Kitchen access, communications consulting, and continued technical assistance and development opportunities. Successful graduation is contingent on participants having no more than 3 absences. For applicants requiring translation and interpretation, we will do our best to accommodate your needs.
Program Information: Primary Location: Three Sister's Kitchen (109 Gold Ave SW, ABQ, NM 87102) Dates: Tuesdays & Thursdays from August 13 - November 21, 2019 Required Hours: Tuesdays and Thursdays from 5:30-8:30pm with additional field trips Topics Covered: Food and Kitchen Safety (including ServeSafe Manager Examination), Culinary Basics, Local Sourcing, Licensing and Permits, Value Added Production Techniques (related to Baked Goods, Prepared Meals, Dehydration, Curing, Pickling, Shelf Stable and Acidified Foods), Product Formulation, Cost Analysis, High Road Business Practices, Labeling, Marketing, HAACP Plans, and Business Planning.
* We will be focusing on recipe development and product formulation to prepare you for successful commercial production, but we will not be producing commercial products for sale during the program. ** Dinner will be provided for most evening sessions.*** Applicants who are not accepted will be placed on a waiting list if appropriate.
