If you are getting a half pig, choose one from the list below. If you are getting a whole pig, you have two shoulders and can choose two from the list below. For clarification, a boston butt is the top of the shoulder and a picnic roast is below. You can get 2 boston butts and 2 picnic roasts out of one shoulder and still have scrap to add to your sausage.
