Reservations for OmaKäse Pop Up with The Cheese Course

The Cheese Course is a cheese-centric dining concept by ACS CCP’s Rachel Freier and Laura Sutter.
Cheese is our star protein and main ingredient. The Cheese Course explores the wonderful and complex world of cheese flavors to recreate cheese sensory experiences through tasting menus.

This OmaKäse dinner sets out to break down the barriers on how cheese can be used in cooking. The menu is based entirely around traditional Japanese dishes with a cheesy twist. Cheese is not a common ingredient in Japanese cuisine, yet the complex flavors and textures found in various cheeses are a perfect pairing. The playful menu showcases how cheese can be used as a main protein, as a source of deeply satisfying umami, and how even the byproducts of cheese making can be used to create exciting bites. Join Rachel and Laura in the exploration of the world of cheese, course by course, and enjoy all that cheese has to offer.

Silken Curd

Persille de Chèvre, cherry vinaigrette, ash, peas

Birchrun Hills curds, teriyaki, shishito, Taleggio, sesame

Käse Ramen

Curated PA Cider pairings will be available, featuring Ploughman Cider.

We have 15 chefs counter spots and 45 seated ticket available. Please specify if you are interested in the chefs counter in your reservation notes. First to reserve, additional reservations will be wait listed in order. All seats will be confirmed by Friday, March 1st at which point we will contact wait listed requests based on any cancellations or drop outs.
