Course Objectives and Description: Culinary is intended to give students basic skills and confidence in the art of cooking/baking. We will cover food/kitchen safety, nutrition/healthy diet options and have “labs” several times a week where we will be practicing cooking, cleaning and managing a shared kitchen. There will be some bookwork, writing and internet research done during class time as well. In addition to lab-time students will watch different documentaries on nutrition, diet and the food industry and be asked to form their own opinions on what a healthy diet looks like for them as an individual. The objective is that students leave this class with an awareness of what they eat and how it is processed as well as the skills necessary to prepare it themselves. Grading PolicyHigh school elective classes are intended to give students independence, creativity and self-confidence. Please keep in mind that your experience in this class is in your own hands- choose your own adventure! You also EARN your grade, I do not “give” it to you. All students begin the school year with an “A”. It is the student’s responsibility to maintain it. There are 2 grading categories-
PARTICIPATION 75%- Each student will earn 10 points a day for actively participating in school related work/activities. Students are expected to use their time wisely and be engaged in creative food activities! Just like P.E.!
ASSIGNMENTS 25%- Each assignment/lab is worth a certain amount of points and the total number of points will be converted into a letter grade. To boost student achievement a “PLUS” period is used for each class period; giving struggling students an opportunity to work in a small group setting with the instructor.* *Due to the lab based nature of this course “PLUS” period may not always be utilized and may be used as enrichment time in our class. All students receive at least 3 grade notices through the semester; however, all students may request grade checks from me ANYTIME! I encourage all of you to be responsible and check your grade with me often. Parents are also encouraged to take advantage of the Parent Portal. The Parent Portal allows parents to monitor their students’ progress in every class. Information regarding the Parent Portal can be given through the FHS website and the office. In addition parents should feel welcome to e-mail or call me to discuss any issues.
Assignments: Work must be turned in when it’s due, a deadline is a deadline! Students can get extensions on assignments if they speak to the teacher but assignments will only be accepted before the end of each grading period. After this point assignments will not be accepted. ATTENDANCE on lab days is very important. Since cooking labs are a group project “making them up” is impossible. If a student is absent they can make up their points with either a extra credit cooking project or a writing assignment.
The assignments/expectations for this course include but will not be limited to-
FOOD/KITCHEN SAFETY- this is VERY important as foodborne illnesses can cause food poisoning and in severe cases death! All students will need to pass a food safety test with a 100% accuracy before being able to cook. The test will have retake opportunities and I expect all students to be perfectly capable of passing!Group cooking/baking labsKitchen maintenance- Students will be expected to keep their space clean and sanitary. We will do a weekly deep cleaning as a class and students will have their lab cleaning grade tied into their cooking grade.Students will be expected to articulate in writing their thoughts on diet and nutrition in a intelligent way.
Class Expectations and PoliciesRespect-You will be expected to respect others, me as your teacher, property and yourself. This is a hate free classroom- insults, derogatory language or any other forms of disrespect will not be tolerated. You will all be treated as young adults as long as you behave that way. Having respect includes respecting property- that includes our supplies, chairs, tables and beautiful campus. Please show your respect by taking care of these things.Responsibility-As young adults you must be responsible for yourself. Be on time and prepared. If you’re not on time and prepared accept the consequences without complaint. When you are absent or missing any assignments it is up to you to come to me and make-up the work! It is your job to do your best and be responsible, and it is my job to guide you to greatness!!!! Bathroom- Students may use the bathroom one at a time and need to take the pass. Let the instructor know when you leave and DO NOT ABUSE this policy, it may be revoked. Food/Drink- outside food and beverages are allowed as long as they are not distracting and you clean up after yourself. For obvious reasons you are not permitted to eat during lab cooking time- save it for before or after and WASH YOUR HANDS. Electronic Devices (Cell Phones, Chromebooks, etc.)- All devices must be put away while the instructor is talking/and or giving assignments. Music Players are permitted while students are working independently. Playing games or watching videos with no educational value on your phone or device is NEVER permitted. Abuse of this policy can result in confiscation of device until the end of class or having the device turned over to the office after repeated offenses. All students sign an “appropriate internet use policy” at the beginning of the year- you are expected to adhere to it!
The Culinary program at this school is run in a relaxed atmosphere. This will only work if students are RESPECTFUL and RESPONSIBLE and behave like the young adults they are. Do not take advantage of the trust I am giving you. You may be removed permanently from this class if you do any of the following:- Dangerous or destructive misuse of kitchen tools/supplies - Intentional destruction of others projects/belongings- Stealing others work or belongings
