*THE PRICE IS BASED ON THE HANGING WEIGHT OF THE ACTUAL ANIMAL. WEIGHTS ARE ESTIMATED; ACTUAL WEIGHT WILL BE CERTIFIED BY THE BUTCHER PRIOR TO AGING IN COLD STORAGE. 7-10 DAYS OF AGING PRIOR TO CUTTING AND WRAPPING IS TYPICAL. WHEN THE MEAT IS CUT AND WRAPPED YOU WILL HAVE ABOUT 50-60% OF THE HANGING WEIGHT IN FINAL YIELD, WITHOUT BONES AND OTHER INEDIBLE PARTS. THIS IS THE USUAL AND CUSTOMARY WAY OF PURCHASING BEEF IN BULK.
** Cut Sheets are only offered on whole beef, due to the rest of the beef going to other customers or into our store freezers, limiting smaller bulk orders to the cuts we offer in the store. On whole beef, unwanted organs can be added to the ground beef or traded with the store for an equal amount of ground beef from our store.
*** Whole cow orders can not be reduced in size if the hanging weight is larger than expected (up to 1,000lbs) due to variations on cuts that we offer in our store being chosen on a personal cut sheet (examples - 2lb or larger stew or ground beef; thinner or thicker steaks or more per package; or cuts we don't carry in store)
