First, watch this: Only Real Bread or listen: Family of B Vitamins OR Sue's Healthy Minutes #86 Freshly milled grain contains the WHOLE grain including the bran and the germ. “Whole grains” from the store (even organic) do not actually contain the whole grain as it would go rancid quickly. The bran and germ have been removed and only part of the bran have been added back in. The extra bran is sold for animal feed, cosmetics, etc. The wheat germ contains the highest amounts of vitamin E of any food, which is helpful for hormone production and cellular protection.

Many people who eat gluten free can tolerate these grains, even whole wheat, because it contains the entire grain, making it easier to digest without complications.

Lots of companies ship direct to you but shipping can be expensive. Just remember you want to buy whole berries, not ground flour to get the most nutritional benefit for your dollar and time.

Grains to buy: Hard White and Hard Red for yeast breads; Soft White for cookies, pastries, etc. I mix Hard White and Hard Red for my yeast breads. Sue Becker's Getting Started Video There are tons of varieties including Kamut, Spelt, Einkorn (will make a dense bread), etc

How to store your grain: Any airtight container. Food grade buckets, lids and other kinds are available. You can also use mylar bags. Place an oxygen absorber inside either for reassurance to keep bugs out. Note: It is not recommended to store ground flour in the freezer unless it’s just for dusting the counter. You really want to grind what you’re going to use immediately. In the first 24 hours, whole grains oxidize and lose 40% of most of its nutrients and lose 90% of nutrients after 3 days, even in the freezer.

How to grind your grain:

Nutrimill and Wondermill both make amazing mills that are easy to use! Use code: PORTERHOMESTEAD for $20 off Nutrimill. I personally don’t recommend a hand grinder except as a back-up. The grind is very course and takes a long time. Vitamix, Blendtec and Ninja blenders can also grind grain. Be sure to research your blender before trying. Your food processor might work too! Getting Started Bread Beckers 

(When converting your regular recipes, add ¼ c more freshly milled flour per cup.)

How to knead: Hand kneading is a free option! Bread machines can do the work for you. Most recommend this one: Zojirushi But it never hurts to try a bread machine you already have.

Ankarsrum, Bosch, Artiste, and Zacme 8.4 qt  all make great mixers for freshly milled dough. I do not recommend using a Kitchen Aid without lots of research. They tend to burn out with the freshly milled dough.

Are you gluten free? This is not medical advice. We recommend you talk to your doctor and do your own research, but there are many people who are gluten sensitive and can eat freshly milled wheat. Freshly ground wheat and other grains are not only tolerated by many, they actually bring healing!
