Polish Style Apple Pie

makes one 22x32cm/9x13inch cake

Ingredients:

450g/about 1lb all-purpose flour

300g/10.5oz margarine or butter

150g/5.2oz powdered sugar

4 yolks

pinch of salt

8-9 red delicious apples - grated

1/2 cup sugar

1 vanilla sugar (8g/0.32oz)

2 teaspoons ground cinnamon

Directions:

Place the flour, salt and sugar in a large bowl, whisk well to combine. Add margarine/butter and using pastry cutter or knife cut in the butter until the mixture resembles coarse meal. Add yolks and knead lightly until you get smooth dough. Divide the dough into two portions, cover each piece with clingfilm and put into a refrigerator for about 2 hours to chill.

Place the half of the grated apples in a saucepan, add sugar and cook for about 1 hour stirring from time to time. Then add the second half of the apples, vanilla sugar, cinnamon and cook for about 1/2 hour. Remove from heat and chill well.

Remove one portion of the dough from the refrigerator and roll into a rectangle. Fit into a 23x32cm/9x13inch pan (you can also just put it into the pan using your fingers). Pierce with the fork and bake in a preheated oven, 180C (355F) for about 10-15 minutes. Cool down.

Put the apples mixture over the slightly baked dough. Remove the second portion of the dough from the refrigerator, roll and lay it over the apples (you can also make a lattice top instead of rolling it). Pierce with the fork and bake in a preheated oven, 180C (355F) for about 45-50 minutes. Cool and sprinkle with powdered sugar.
