Aji Paste (Pepper Paste)

10-20 dried large peppers (amarilla is best but use what you can find)
Hot water, as needed
1-2 garlic cloves (optional)
1. Heat a pan over medium-hot heat. Add the peppers, to cover in a single layer. Heat the peppers until they soften - do not burn them. When pliable remove the seeds and veins.
2. Add the peppers to a bowl and cover with hot water. Allow them to soak for 15-30 minutes.
3. Drain the peppers (reserving some liquid) and puree them in a food processor with some of the liquid and the garlic, if using.
4. Unused portion may be frozen. The spice level varies depending on the pepper used - use with caution.
