Caramelized Onion Pasta
1 pound pasta
2 tablespoons olive oil
2 pounds onions, sliced thin
Salt and fresh ground pepper
1. Cook the pasta until al dente in a large pot of boiling water. Drain and reserve 1 cup of cooking water. Set aside.
2. Heat the oil in a large pot over medium-high heat. Add the onions and reduce the heat to medium-low. Season with salt and pepper and cover the pot. Sweat the onions for about 25 minutes, stirring occasionally, but always re-covering the pot.
3. After 25 minutes, remove the cover, stir, increase heat to medium and continue to cook the onions for another 25 minutes or until the onions are caramelized, golden brown and tender.
4. Toss the onions with the pasta, adding reserved cooking water if needed. Adjust the seasoning with salt and pepper.
