Chocolate Brownie Cookies
Adapted from: Food and Wine Magazine, November 2012
8 oz. semisweet chocolate, chopped
2 tbsp. butter
2 eggs
¾ cup sugar
½ tsp. vanilla extract
Pinch salt
¼ cup flour
¼ tsp. baking powder
6 oz. chocolate chips
Melt the semisweet chocolate and butter in the microwave or over a double broiler. Let cool slightly.
Using an electric mixer, beat the eggs with the sugar at medium speed until thick and pale. Add the vanilla extract and salt. Slowly fold in the melted chocolate. Mix in the flour and baking powder. Stir in the chocolate chips. Pour the mixture into a 8X8 inch glass baking pan. Place in the freezer for 20-30 minutes.
Preheat the the oven to 350 degrees and line 2 sheets with parchment paper. Scoop the partially frozen cookie dough and place on sheets. Bae 10-12 minutes or until the tops of the cookies crack (mine took a bit longer because I froze the cookie dough balls before I baked them).
Let cool on the cookie sheet.
