Bistro Burgers with Pickled Onion

Yields 4 servings

  1. Heat 1 teaspoon olive oil in a medium skillet over medium high heat. Add onion, and cook until softened, about 2 minutes. Season with salt and pepper, to taste.
  2. Add the sugar and vinegar; toss to coat. Let mixture cool.
  3. In a small bowl, combine the garlic and mayonnaise.
  4. Divide ground beef into 4 balls. Press each lightly to form 3/4-inch-thick patties; season with salt and pepper, to taste.
  5. Heat remaining 1 teaspoon olive oil in a grill pan or cast-iron skillet over medium high heat. Grill the patties for 3 minutes on each side for medium-rare or 4-5 minutes for medium, flipping only once.
  6. Serve burgers on rolls with pickled onions and garlic mayonnaise.
