Bistro Burgers with Pickled Onion
Yields 4 servings
Ingredients:
- 2 teaspoons olive oil, divided
- 1 red onion, thinly sliced
- Kosher salt and freshly ground black pepper, to taste
- 1 teaspoon sugar
- 2 tablespoons red-wine vinegar
- 1 clove garlic, minced
- 3 tablespoons mayonnaise
- 1 pounds ground beef
- 4 split brioche rolls
Directions:
- Heat 1 teaspoon olive oil in a medium skillet over medium high heat. Add onion, and cook until softened, about 2 minutes. Season with salt and pepper, to taste.
- Add the sugar and vinegar; toss to coat. Let mixture cool.
- In a small bowl, combine the garlic and mayonnaise.
- Divide ground beef into 4 balls. Press each lightly to form 3/4-inch-thick patties; season with salt and pepper, to taste.
- Heat remaining 1 teaspoon olive oil in a grill pan or cast-iron skillet over medium high heat. Grill the patties for 3 minutes on each side for medium-rare or 4-5 minutes for medium, flipping only once.
- Serve burgers on rolls with pickled onions and garlic mayonnaise.
