White Chocolate Ice Cream

8 oz. white chocolate, finely chopped

1 cup whole milk

⅔ cup sugar

Pinch of salt

5 egg yolks

2 cups heavy cream

Put the chocolate pieces in a large bowl and set a mesh strainer on top.

Warm the milk, sugar, and salt in a saucepan. In another bowl, whisk together the egg yolks. Slowly add the warmed mixture to the egg yolks and return the whole thing to the saucepan.

Stir over medium heat until the mixture thickens and coats the back of a spoon. Pour the custard through a strainer over the white chocolate. Stir until the white chocolate has completely melted. Add in the heavy cream and chill.

Churn in an ice cream maker according to the manufacturer's instructions.
