Chicken Caesar Casserole

2 lbs                cooked chicken breast, cut into ½”-1” pieces

½ c.                red bell pepper, chopped

1/2c.                green onions, chopped

1/3c.                light creamy Caesar dressing

1/2c.                chicken broth

1 ½ c.                mozzarella cheese, shredded

12 oz. pkg        tube pasta (penne or macaroni), cooked and drained

¼ c.                croutons (crushed)

Combine all ingredients but croutons, mixing well, in a 2 quart baking dish.  

From Freezer:  Thaw casserole. Top with croutons and bake in 350 degree oven for 30 minutes or until topping is browned and casserole is bubbly.

Note from Dana: You can use more caesar dressing to make a creamier casserole.
