1 - 1 ½ in. thick boneless pork chops
vegetable or canola oil for brushing chops
kosher salt
ground pepper
Allow chops to come to room temperature.
Preheat the grill to medium.
Brush the chops with oil.
Sprinkle liberally with salt and pepper.
Grill 4-6 minutes per side, or until desired doneness.
Allow to rest 5-10 minutes before serving.
