Soft Frosted Sugar Cookies

Cookies:

2 ¼ cups flour

2 ¼ tsp. tsp. baking powder

½ tsp. salt

¾ cup (1 ½ sticks) butter, room temperature

¾ cup sugar

2 eggs

2 ½ tsp. vanilla

Frosting:

2 ½ cups powdered sugar

2 tbsp. butter, melted

1 ½ tsp. vanilla extract

3 tbsp. milk (plus more as needed)

To make the cookies, in a medium bowl, whisk together flour, baking powder, and salt. Using a mixer, cream together butter and sugar. Add the eggs and vanilla and mix well to combine. Add the flour mixture and stir until a cohesive dough forms. Chill in the refrigerator for 1 hour.

Preheat the oven to 350 degrees and line cookies sheets with parchment paper. On a floured surface, roll out dough to desired thickness and cut out using cookie cutter. Alternatively, using a cookie scoop to portion out dough and drop on cookie sheets. Bake for 10-12 minutes or just until set. Let cool on baking sheets.

For the frosting, whisk all the ingredients until smooth. Add more milk to reach your desired consistency. Store in an airtight container.
