CHICK PEA CURRY

Total cooking time: depends on how long you simmer it - the longer the better

INGREDIENTS

2 onions                        1 T ground coriander

4 cloves garlic                        700ml Ragu (regular sauce)

1 T ghee or oil                        1 540ml Chick peas

1 t chilli powder                1 t garam masala

1 t salt

1 t paprika

1 t tumeric

1 T ground cumin

  1. Slice onions finely; crush garlic. Heat oil in a medium pan. Add onion and garlic to the pan; cook over medium heat, stirring, until soft.
  2. Add chilli powder, salt, tumeric, paprika, cumin and coriander. Stir over heat 7 mins.
  3. Add chick peas and tomato sauce (reserve some sauce if simmering longer); stir to combine. Simmer, covered, over low heat for 20 mins, stirring occasionally.
  4. Stir in garam masala. Simmer, covered for 10 minutes minimum - longer is better - stir periodically + more sauce as needed.

Note: makes a delicious snack wrapped inside chapatis or naan bread.
