Gooey Butter Cake Ice Cream

Ice Cream and Butterscotch Sauce Adapted from: Jeni’s Splendid Ice Creams at Home
Cake:
1 ½ cups flour
¾ cup granulated sugar
1 ½ tsp. baking powder
¼ tsp. salt
2 eggs
½ cup milk
6 tbsp. unsalted butter, room temperature
1 ½ tsp. vanilla extract
Ice Cream:
2 cups whole milk
1 tbsp. plus 1 tsp. cornstarch
4 oz. cream cheese, room temperature
½ tsp. salt
1 ¼ cup heavy cream
⅔ cup brown sugar
2 tbsp. light corn syrup
Butterscotch Sauce:
½ cup sugar
⅓ cup honey
¾ cup heavy cream
2 tbsp. butter
Pinch salt
For the cake, preheat the oven to 350 degrees. In a large bowl, whisk the flour, sugar, baking powder, and salt. Add the eggs, milk, butter, and vanilla to flour mixture. Using a mixer, beat for 1 minute until blended. Scrape down sides of the bowl and beat for another 2 minutes. Bake in 9 inch circle pans for 25-30 minutes. Let cool.
For the butterscotch sauce, combine the sugar and honey in a medium saucepan oven medium heat. Cook without stirring until the sugar turns an amber color. Remove from heat and slowly whisk in cream. Once the cream is incorporated whisk in the butter and salt. Let cool and refrigerate. Sauce will keep for 2 weeks.
For the ice cream, mix 2 tbsp. of the milk with the cornstarch in a small bowl. In a medium bowl, whisk together the cream cheese and salt.
Cook the remaining milk, cream, sugar, corn syrup and vanilla seeds in a 4 quart saucepan. Bring to a boil and boil for 4 minutes. Remove from heat and whisk in cornstarch mixture. Bring the mixture back to a boil and cook for 1 minute. Whisk the milk/cream mixture into the cream cheese until smooth.
Let the mixture cool and then refrigerate until cold. Churn in an ice cream maker according to the manufacturer's instructions.
While the ice cream is churning, cut the cake into cubes. Toss with ¾ cup butterscotch sauce in a large bowl.
After the ice cream is finished churning, layer the ice cream and cake pieces into a freezer-safe container and freeze until hard.
