Eton Mess

yield: 4 small servings

Ingredients:

2 cups strawberries

1 teaspoon sugar

1 teaspoon pomegranate juice (or balsamic vinegar)

1 cup heavy whipping cream

a few meringues (I used 6 medium cookies)

Directions:

Wash, hull and chop the strawberries and put them into a bowl. Add sugar and pomegranate juice or balsamic vinegar (or you don’t have to use anything and they will also be very good), mix and set aside while you whip the cream.

Whip the cream in a large bowl until thick but still soft. Crash meringues and add to the cream and mix gentle. Take out about half of a cup of chopped strawberries and fold the rest into the cream and meringues mixture.

Arrange on 4 serving bowls or glasses and top with remaining chopped strawberries.

Serve immediately.
