Fluffy Crepes

yield: 10-11 crepes

Ingredients:

2 cups milk

2 cups all-purpose flour

3 eggs (separate yolks and whites)

1 tablespoon sugar

pinch of salt

oil to bake

jam or any other favorite topping to serve

Directions:

Mix/whisk together the milk, flour, sugar and yolks.

In a separate bowl whisk the egg whites and pinch of salt until stiff.

Fold gently the egg whites into the milk and flour mixture and mix well.

Bake immediately.

Heat a lightly oiled frying pan (23cm/9in diameter) on the medium heat. Pour about ½ cup batter onto it and tilt the pan with a circular motion so that the batter coats the surface evenly. Bake for about 1-2 minutes and then flip it and bake the other side until golden.

Serve with the jam or whipped cream or any other sweet topping.
