Tomato Basil Orzo Salad with Lemon Garlic Vinaigrette

Prep Time: 15 minutes Cook Time: 15 minutes Serves: 4

1 cup orzo pasta

1 cup cherry tomatoes, halved

1/3 cup fresh basil, chiffonade

3 cups fresh spinach, chiffonade

3 tablespoons capers, minced

Lemon Garlic Vinaigrette, as needed (recipe below)

Cook orzo according to package directions and cool. Place all ingredients in large mixing bowl. Add dressing as desired and toss to coat.

Can be served warm, at room temperature or chilled.

Lemon Garlic Vinaigrette

1 lemon, zested and juiced

2 tablespoons olive oil

2 garlic cloves, minced

1 teaspoon Dijon mustard

salt and pepper, to taste

Whisk all ingredients together and serve.
