Leek-Parsnip Soup

Ingredients:

T oil or Earth Balance

4 c sliced leeks, white parts only

(using some white onions is fine, up to half)

2 garlic cloves, minced

6 cups water

2 vegetable bouillon cubes or replace 2 c of water wit veg. broth or equivalent

4 c peeled, diced parsnips

2 t salt

fresh ground pepper

fresh chives

Heat the fat in a large pot on medium heat and add the leeks and onions, if using. Add the garlic. Saute until the leeks are very wilted, but not darkened. You want to keep the nice white color of the soup.

Add the water, vegetable broth, parsnips, salt and pepper. Bring the soup to a boil and reduce to simmer.  Cook the soup, covered on medium until the parsnips are very tender.

When the soup is done you can blend it or keep it rustic. Taste and adjust seasoning.

Garnish the soup with snipped chives.
