AVOCADO AND APPLE SALAD

2 ripe avocados, halved, pitted, peeled and sliced

2 apples, cored and sliced with skin

3 tbsp Dijon mustard

3 tbsp honey

1 tbsp lemon juice

4 tbsp olive oil

1 tbsp chopped fresh parsley

¼ cup sliced toasted almonds (I sprinkle Lowry’s garlic salt when I toast them)

Salt and pepper to taste

 

• Place sliced avocados and apples in bowl; set aside.

• Place mustard, honey, lemon juice and oil in small bowl; season well. Using whisk, mix until thick.

• Pour dressing over avocados and apples; sprinkle with parsley.

Add almonds, season and toss gently.
