Yellow Cupcakes with Chocolate Frosting

1 ½ cups flour

¾ cup granulated sugar

½ tbsp. baking powder

¼ tsp. salt

2 eggs

½ cup milk

6 tbsp. unsalted butter, room temperature

½ tbsp. vanilla extract


1 cup chocolate chips

3 tbsp. butter

½ cup sour cream

1 tbsp. corn syrup

For the cake, preheat the oven to 350 degrees. In a large bowl, whisk the flour, sugar, baking powder, and salt. Add the eggs, milk, butter, and vanilla to flour mixture. Using a mixer, beat for 1 minute until blended. Scrape down sides of the bowl and beat for another 2 minutes.

Spoon the batter among a cupcake pan (with liners). Bake for 18 -20 minutes. Let cool in pan for a few minutes and transfer to wire rack to cool completely.

For the frosting, melt the chocolate chips and butter in the microwave. Whisk in sour cream and corn syrup. Cover and refrigerate for about 20 minutes.

Top cupcakes with frosting.
