Mini Bananas Foster Cheesecakes

¾ cup graham cracker crumbs (4 sheets)

¼ cup finely chopped pecans

½ tsp. cinnamon

¼ cup butter, melted


8 oz cream cheese, softened

1/3 cup brown sugar

2 eggs

2 tbsp. sour cream

2 tbsp dark rum

½ tsp. cinnamon

2 medium bananas, mashed


½ caramel sauce (either store bought or homemade)

1 banana, sliced

1 tbsp. dark run (optional)


Preheat oven to 325 degrees. Stir together graham cracker crumbs, pecans, cinnamon and butter. Press into bottom of lined mini muffin cups. Bake for 8 minutes.


Beat cream cheese until creamy. Add brown sugar and eggs. Stir in sour cream,  rum, and cinnamon. Mash 1 banana and add to mixture. Spoon into cups - make sure that you fill each cup to the top. Bake for 16- 18 minutes. Cool, then refrigerate until chilled.


Heat caramel. Remove from heat, add rum, Slice bananas and add to caramel. Top with caramel.
