Corn Salad
1.) You need the following ingredients: 4 ears of corn, 2 avocados, 2 limes and cilantro, salt and olive oil to taste
2.) Clean your corn and roast. You can roast by grilling or broiling. The corn cooks for about 5 minutes on each side.
3.) Allow the corn to cool for about 15 minutes. Then slice the kernels off into a bowl.
4.) Add two sliced avocados to the corn
5.) Squeeze the juice of two limes over top. Add Cilantro, olive oil, and salt to taste.
6.) Gently mix and enjoy!
