Sweet Potato Oven Fries

Ingredients:
~ 3 Sweet Potatos or Yams
~ ¼ cup EVOO
~ ½ tsp Ground Pepper
~ ¼ tsp Red Cayenne Pepper
~ ½ tsp Garlic Salt
Directions:
Preheat oven to 450 degrees.
In a medium saucepan, heat water to simmer. Place whole sweet potatoes into simmering water for 7-8 minutes to par boil. Remove from water, pat dry with paper towel. Slice into rounds ¼-1/3 inch thick. Set aside into medium bowl.
In medium bowl, pour EVOO over the top, and the spices. With large spoon, mix together gently until all sweet potatoes are thoroughly covered.
On non-stick rimmed cookie sheet, lay out rounds in a single layer. Place in oven for 8 minutes until soft and start to brown. Remove, flip over each round over and return to oven for additional 10 minutes.
When finished, scoop onto plate lined with paper towels to drain. Serve immediately.
