Broccoli Soup

-1 package of frozen Broccoli

-1 medium Yellow Onion-chopped

-32 oz Low Sodium Chicken Broth

-1/2 tsp Salt

-1/2 tsp Thyme

-1/2 tsp Garlic Powder

-1/4 cup Butter

-1/4 cup Flour

-1 pint Half & Half

-8 oz Velveeta- cubed

Combine broccoli, onion, chicken broth, salt, thyme and garlic powder and allow it to boil and simmer until tender, about half an hour. Take a large saucepan and melt the butter. Then sprinkle the flour into the saucepan and whisk until it bubbles and becomes pasty. Pour while stirring the Half & Half. Add the Velveeta and simmer until melted. Stir the cheesy sauce into the broccoli mixture. Simmer for 15 minutes and then serve!
