Chicken Scallion Dumplings with Ponzu Sauce

For the Dumplings (makes 20 dumplings):

-1/2 lb of finely minced raw chicken breast (or thigh)

-2 Scallions thinly sliced

-4 cloves of minced Garlic

-2 tsp fresh minced Ginger

-1-1/2 tbsp Reduced-Sodium Soy Sauce

-2 tsp Sesame Oil

-1-1/2 tsp Rice Vinegar

-1 tbsp Cornstarch

-20 Wonton Wrappers

In a medium mixing bowl, combine all the filling ingredients. Be sure to mix well. Place 1 tbsp of filling in the middle of the wrapper. Using a wet brush or finger, moisten the perimeter of the wrapper and then fold in half creating a triangle. Squeeze edges together tightly to seal and make tortellini shaped dumpling. Boil dumplings for 5 minutes. Serve with Ponzu Sauce.

For the Ponzu Sauce:

-1/3 cup Reduced-Sodium Soy Sauce

-3 tbsp Lemon Juice

-1 tsp Sugar

Combine ingredients in a small bowl. Drizzle over dumplings or use for dipping.
