Strawberry Chocolate Chip Muffins



  1. Preheat oven to 350° F. Lightly grease 12 muffin cups or line with muffin papers

  2. In large bowl mix together the flour, baking powder and sugar. Cut in cold butter with a pastry blender (or two knives) until it is in small pea-size pieces.

  3. In small bowl mix the egg, vanilla and cream. Add all at once to flour mixture. Stir with spoon until just blended. The batter will be thick. Fold in the diced strawberries and chocolate chips. Do not over mix.

  4. Spoon into muffin cups and bake for 22-25 minutes. Cool in muffin pan for five minutes then transfer to wire rack to cool completely.
