Double Chocolate Peppermint Cookies

1 ½ sticks butter, softened
½ cup granulated sugar
¼ cup brown sugar
1 egg
1 ½ cup flour
½ cup unsweetened cocoa powder
1 tsp. salt
½ tsp. baking soda
20 miniature peppermint patties, unwrapped and chilled
2 oz. melted white chocolate
Using a mixer, cream together the butter and sugars. Add the egg and mix to combine. In another bowl, whisk together the flour, salt, and baking soda. Add to the creamed butter/sugar mixture. Chill for 1 hour.
Preheat the oven to 350 degrees. Line 2 cookie sheets with parchment paper. Scoop out 1 tbsp. of dough into a ball, flatten, and wrap around peppermint patty. Bake for 15 minutes. Let cool on rack completely.
After the cookies have cooled, drizzle melted chocolate over the cookies.
