Cherry Waffles (makes 6 Belgian or large waffles)
(adapted from How to Cook Everything by Mark Bittman)
Canola oil for greasing waffle iron
2 cups All-Purpose Flour
1/2 teaspoon Salt
2 tablespoons Sugar
3 teaspoons Baking Powder
1 + 1/2 cup Milk
4 tablespoons Butter, melted and cooled
1 teaspoon Vanilla Extract or 1/8 teaspoon Almond Extract
1 + 1/3 cup Cherries, pitted and chopped, plus additional for serving
1/3 cup Sliced Almonds, optional
1. Preheat waffle iron.
2. Combine the dry ingredients. Mix together the milk and eggs. Stir in the butter and vanilla. Stir the wet into the dry ingredients.
3. Spread a ladleful of batter onto the waffle iron and cook until done about 3 to 5 minutes. Repeat until all the batter is used.
4. Serve immediately with your choice of toppings like maple yogurt sauce, maple syrup, cherries, almonds and/or whip cream.
Maple Yogurt Sauce
1/2 cup Greek nonfat plain yogurt
1/3 cup Maple Syrup
Dash or two of Cinnamon
Dash of Vanilla Extract
Whisk all ingredients together; add more maple syrup to make it thinner or more yogurt for a thicker sauce.
