Ham Fried Rice

2 eggs

1/2 tsp sesame oil

1 tsp canola oil

1 c chopped onions

2-3 cloves garlic, minced

3/4 c chopped carrots

1/2 c chopped green onions

1 tsp grated ginger root

1/4 cup soy sauce

2 c. diced ham

½-1  tbsp honey

4 cups cooked brown rice (very cold)

Whisk eggs in a small bowl. Spray a skillet/wok with non-stick spray and pour in eggs, cook until set. Remove from pan and cut into pieces.

Combine sesame oil and canola oil in a wok/skillet.  Add onions, garlic, carrots, green onions, and ginger. Stir fry over medium heat for about 5 min, until veggies are softened. Add soy sauce, honey, ham, egg, rice. Mix well, cook 2-3 minutes until heated through.

To freeze:  Spread rice on a baking sheet and let cool.  Once cooled, put into a gallon size ziplock bag and freeze.  

To reheat:  Open ziplock bag and put into microwave.  Defrost the rice just until warm.  Pour the warm rice into a skillet with a small amount of canola oil and stir-fry until it is hot.  Add soy sauce to taste.  

The fried rice can also be eaten by simply defrosting in bag until hot.  It does not need to be stir-fried.
