Cucumber Soygurt Sauce


1  6 oz. carton plain unsweetened soygurt

1 medium cucumber, peeled, seeded, chopped fine or grated

1 tbsp lemon juice

2 tspn fresh mint leaves, chopped

1/2 tspn sugar

1/2 tspn salt


  1. In a medium bowl, mix together soygurt, cucumber, lemon juice, mint, sugar, and salt.
  2. Keep refrigerated; use within 3 days.
