Vegetarian Chow Mein
yield: 3-4 people
Ingredients:
1lb/454g fresh chow mein noodles
4 tablespoons canola oil
3 garlic cloves - crushed
1 teaspoon fresh ginger - chopped
1 bunch of green onions
1 handful of sugar snap peas (about 75g/2.6oz)
1/2 red bell pepper (about 50g/1.7oz)
5-6 white mushrooms (about 75g/2.6oz)
broccoli (about 75g/2.6oz)
200g/7oz extra firm tofu - cubed
2 tablespoons hoisin sauce
2 tablespoons soy sauce
2 tablespoons honey
salt, black pepper to taste
Directions:
Soak the noodles in a pot/a bowl of boiling water for about 2-3 minutes, stir well, drain and set aside.
Heat a large skillet or a wok over a high heat. Add oil, garlic and ginger and stir-fry for a few minutes. Then add green onions (white part), sugar snap peas, bell pepper, mushrooms and broccoli and stir-fry 2-3 minutes after each addition. Add tofu and stir-fry for another minute or two. Stir through the noodles and mix well.
In a small cup mix together the hoisin sauce, soy sauce and honey. Add the sauce mixture into the wok and mix until thoroughly combined and heated through.
Serve sprinkle with finely chopped green onions.
