Spinach-Tofu Filling

Ingredients:
tofu, soft is best, rinsed and patted dry
1 bag spinach, frozen, thawed and squeezed very well OR a bunch of fresh spinach
4 cloves garlic, chopped to help the food processor
2 T olive oil
1 T basil, dried
1 bunch fresh basil (optional)
salt and fresh ground pepper
Put everything in a food processor, process very well and add salt and pepper to taste.
Use as a ‘ricotta’ base for lasagna or stuffing for shells.
