Chocolate Dipped Honeycomb Candy

1 ½ cups sugar
¼ cup water
¼ cup light corn syrup
1 tbsp. baking soda
8 oz. dark chocolate, chopped
1 tsp. shortening
Line 1 cookie sheet with parchment paper and spray with non-stick spray.
In a medium saucepan, boil sugar, water, and corn syrup over medium high heat. Do not stir! Let boil until the mixture reaches 300 degrees. Quickly stir in baking soda. Pour onto baking sheet. Don’t spread the mixture - it’s ok if it doesn’t cover the entire pan. Let cool completely.
When the candy is cool, break into bite sized pieces. In the microwave, melt chocolate and shortening (stirring often). Dip a section of the candy into chocolate. Place on parchment paper until set before packaging.
