Fiesta Breakfast Casserole

½ lb. bulk Italian sausage (or ‘hot’ if you like spicy things)

6 cups white bread cut in cubes

1 ½ cups shredded cheddar cheese

1 cup salsa or 1 cup diced tomatoes

4 eggs

¾ cup milk

Cook sausage until browned.  Pour off fat.

Arrange sausage in 2 qt shallow baking dish.  Top with bread cubes and shredded cheese.  Mix salsa or tomatoes, eggs and milk.  Pour over all.

Cover and refrigerate 2 hours or overnight.

Bake uncovered at 350 degrees for 45 minutes or until done.  Serve with sour cream, green onions, and extra salsa.

Serves 6.
