Ingredients:

1 pound extra firm tofu, pressed for 5 minutes, mashed well

½ teaspoon onion powder

½ teaspoon garlic powder

½ teaspoon turmeric

½ teaspoon sea salt

¼ teaspoon fresh ground black pepper

1 teaspoon vegan butter

1 Tablespoon vegenaise

½ Tablespoon nutritional yeast

½ teaspoon black salt, or to taste

vegan butter for cooking

12 slices vegan ham slices

8 slices sourdough bread

8 slices of vegan cheese or 8 Tablespoons shredded vegan cheese

In a medium bowl mix the mashed tofu, onion powder, garlic powder, turmeric, sea salt and ground pepper. Heat a saute pan on medium heat and melt the butter. Add the mashed tofu mixture to the pan and cook and stir until the tofu is heated through, a few minutes. Remove from heat.

Mix the vegenaise, nutritional yeast and black salt with the tofu mixture. Keep it warm by covering with aluminum foil.

For each sandwich, overlap 3 slices of ham so that they are as long as one slice of bread. Brown each group of overlapping slices of ham in a little butter over medium heat in a saute pan. Cook until golden but do not over cook. Set aside but keep warm by covering with aluminum foil.

Heat a larger pan on medium heat. To make one sandwich, butter one side of two pieces of bread. Place the buttered side down in the hot pan. Lay one slice of cheese (or 1 Tablespoon of shredded cheese) on each slice of bread. On one bread lay one group of previously cooked overlapping ham slices. On top of the ham place a quarter of the warm tofu mixture. Cook the bread slices until golden. When they are golden put the slice of bread with only the cheese on the tofu mixture. Remove from heat and slice in half. Repeat with all the sandwiches to make 4 total sandwiches.
