Peanuty Pecan Oatmeal Cookies

⅓ cup smooth peanut butter
⅓ cup pecans, toasted
¾ cup flour
¼ tsp. baking soda
½ cup sugar
½ cup brown sugar
½ cup unsalted butter, room temperature
1 tsp. vanilla extract
1 egg
¾ cup old-fashioned oats
Combine the peanut butter and pecans in a food processor and process until smooth. In another bowl, whisk together the flour, baking soda, and salt.
Using a mixer, cream together the butter and both sugars. Add the peanut butter/pecan mixtures and blend well. Beat in egg. Add dry ingredients and mix until well combined. Add the oats mix on high speed for 1 minutes to break up the oats. Cover bowl with plastic wrap and refrigerate for at least 1 hour.
Preheat oven to 375 degrees. Line 2 baking sheets with foil. Scoop rounded balls of dough and place 1 inch apart. Bake until light golden brown (about 11 minutes). Let cookies cool completely.
Yield: 2 dozen
