Best Salsa Ever
(makes about 1 quart)
- 1 28 oz. can whole or diced tomatoes
- 1 jalapeno
- ½ medium white onion
- 1 garlic clove
- 1 teaspoon salt
- ¼ teaspoon cumin
- Juice of ½ lime, or about 1 tablespoon
- 2 tablespoons distilled white vinegar (optional, but gives it nice zip and helps it taste fresh longer)
- a handful of cilantro, about 1/3 cup
Put everything in a blender or food processor, and pulse until desired consistency.
