Peanut Mallow Bars
1 package yellow cake mix
2 tablespoons water
1/3 cup butter or margarine, softened
1 egg
4 cups mini marshmallows
Peanut Topping:
1 package peanut butter chips
2/3 cup light corn syrup (can use dark)
1/4 cup butter or margarine
2 teaspoons vanilla
2 cups crisp rice cereal
2 cups salted peanuts
Preheat oven to 350.
Beat cake mix, butter, and egg until blended. (Batter will be thick.) Spread into a greased 13x9x2 baking dish. Bake for 22-25 minutes. Sprinkle with marshmallows. Bake 2 minutes longer. Place on wire rack while preparing topping.
In saucepan, combine peanut butter chips, corn syrup, and butter. Cook and stir on med-low heat until melted and smooth. (I believe I just melted it in the microwave.) Remove from heat. Stir in vanilla, cereal, and peanuts. Spread over marshmallows. Cool completely. Cut into squares.
Yield: 2 1/2 dozen
