Cook Your Own Beans

2lb dry beans

1 tsp salt

¼ tsp pepper

Rinse beans in a colander, making sure there are no rocks amongst the beans. Put beans in a large pot. Cover with water. Bring to a boil on high, boil for one minute. Remove from heat and let sit at least one hour. Pour beans back into colander and rise pot. Rinse beans again, returning to the pot. Cover with water. Add salt and pepper (for chili beans, add 4 heaping spoonfuls of chili powder). Cook on medium until beans are desired softness. You can store beans in the freezer until you’re ready to use them. Makes about 4 cans worth.
