Peanut Butter Sandwich Cookies

Cookies:

¾ cup flour

½ tsp. baking soda

¼ tsp. baking powder

½ tsp. salt

8 tbsp. butter, room temperature

½ cup creamy peanut butter

½ cup granulated sugar

½ cup brown sugar

1 egg

1 tsp. vanilla

1 cup oats (I used old fashioned, but quick cooking is fine too)

Filling:

3 tbsp. butter, room temperature

½ cup creamy peanut butter

1 cup powdered sugar

3 tbsp. milk

In a medium bowl, whisk together flour, baking soda, baking powder, and salt. In a mixer, cream together butter, peanut butter, and both types of sugar. This will take a few minutes. Add the egg and vanilla and mix to combine. Add the flour mixture and mix to combine. Finally, stir in the oats.

CHILL MIXTURE IN THE REFRIGERATOR FOR AT LEAST 1 HOUR.

Using a 1 teaspoon measuring spoon, scoop out dough and roll into balls. Bake in a 350 degree oven for 7 minutes. When you take out the cookies, they will by puffy and look soft. Leave them on the cookie sheets as they cool and they will become flat.

For the filling, mix together butter, peanut butter, and powdered sugar until combined. Add the milk and mix until fluffy. Don’t mix too much or the filling will lose it’s fluffiness. If this happens, add more powdered sugar and milk until the mixture becomes fluffy again.

Fill the cooled cookies with the filling (I used a piping bag with a plain tip).
