Gingerbread Cookies

Adapted from: Food Network Magazine, December 2010

3 ½ cups flour

1 tsp. baking soda

1 tsp. salt

1 tbsp. ground ginger

2 tsp. cinnamon

¼ tsp. clove

¼ tsp. allspice

6 tbsp. melted butter

1 tbsp. melted shortening

⅔ cup brown sugar

¾ cup molasses

1 egg

½ cup milk

In a medium bowl, whisk together flour and all the spices. In another bowl, cream together butter, shortening, brown sugar, and molasses. Mix in the egg. Add the flour mixture and mix until combine. Carefully add the milk. Chill the dough in the refrigerator for at least 1 hour.

Preheat the oven for 350 degrees. Roll out the cookies on a floured surface to ¼ inch thickness. Cut out using your favorite cookie cutter! Bake for 10-12 minutes. Transfer to wire rack to cool completely before frosting.

Note: This makes a ton of cookies! I froze half the dough to make cookies another time.
