Smoked Mackerel Salad
yield: 4 people
Ingredients:
250g/8.8oz smoked mackerel - bones and skin removed and cut into small cubes
1 medium potato (about 200g/7oz) - cooked and cubed
4 hard boiled eggs - 3 cut into small cubes and 1 for decoration
2-3 pickles - cut into small cubes
½ onion - chopped or cubed
5 tablespoons corn (from a can)
½ cup sour cream
¼ cup plain yogurt
2-3 garlic cloves - minced
juice from ½ lemon
salt and black pepper to taste
Directions:
Mix together all ingredients for the salad: mackerel, eggs, pickles, onion and corn.
In a small bowl mix well sour cream, yogurt, lemon juice and garlic, season well with salt and pepper and pour the mixture over the salad. Mix, decorate with egg and chill a little before serving.
