Onion Confit

Ingredients:
1 T olive oil
2 large red onions, thinly sliced
1 T garlic, chopped
1/4 c balsamic vinegar
1/2 c red wine
2 T brown sugar
1/2 t salt
1/4 t ground pepper
Heat the oil in a saute pan, add the onions and cook for about 10 minutes on medium.
Add the rest of the ingredients, garlic, vinegar, wine, sugar, salt, and pepper. Cook for another 15 minutes on low stirring often. Allow to cool.
Serve with Lentil Pate
