Orange Cake with Egg Whites
makes one 10inch bound cake
Ingredients:
Cake:
about 6 egg whites (200ml)
1 cup sugar
1 ½ cups all-purpose flour
2 teaspoons baking powder
6 tablespoons butter - softened
zest from 1 orange
150ml milk
pinch of salt
1 teaspoon orange extract (optional)
Icing:
1 cup powdered sugar
3-4 tablespoons orange juice (from ½ the orange)
candied orange peel to decorate (about 2 tablespoons) - chopped
Directions:
Sift the flour and baking powder and set aside.
Cream the butter, sugar, orange zest and orange extract until fluffy. Add (gradually) the milk and mix very well. Then add the flour and mix again until well incorporated.
In a separate bowl whisk the egg whites with salt until stiff. Fold them into a batter and mix very gently with a spatula or wooden spoon.
Pour the batter into a greased 10inch bound pan and bake in a preheated oven 350F (180C) for about 35-40 minutes.
Cool on the wire rack, cover with icing and sprinkle with chopped candied orange peel or just sprinkle the cake with the powdered sugar.
To make an icing: whisk together the powdered sugar and orange juice until you get a smooth and thick paste.
