Chocolate Peanut Butter Fudge

2 ½ cups granulated sugar

¼ cup cocoa powder

1 cup evaporated milk

1 tbsp. light corn syrup

½ cup unsalted butter, divided

½ cup peanut butter

2 tsp. vanilla extract

Line an 8X8 inch square baking pan with parchment and spray with non-stick spray. Set aside.

Combine the sugar, cocoa powder, evaporated milk, and corn syrup in a medium saucepan over medium heat. Stir constantly until the sugar dissolves.

Add 2 tbsp. butter and stir until the butter melts. Allow the mixture to come to a boil, then cover and boil for 3 minute.

Remove the lid and cook until the mixture reaches 234 degrees on a candy thermomenter. Remove from heat, add the rest of the butter, peanut butter, and vanilla extract without stirring.

Let sit for 10 minutes, then transfer to an electric mixer. Beat on medium speed until the mixture loses it’s glossy appearance (about 5 minutes). Pour into prepared pan.

Allow the fudge to come to room temperature then transfer to the fridge until set.
