Potato Chowder
Cooking Time: 8 1/2 to 10 1/2 hours
Ideal slow cooker size: 5-qt
Ingredients:
8 cups diced potatoes, peeling is optional (I use just regular brown, baking potatoes and I usually leave the skin on)
3, 14.5 oz. cans chicken broth or vegetable stock
1, 10 oz. can cream chicken soup
1 small red onion, diced
3 cloves garlic, minced
salt & pepper to taste
*2 cups chopped broccoli optional (you can always try other veggies)
*your favorite toppings
Directions:
Place all ingredients in Crock-pot and mix. Cover and cook on low 8-10 hours.
Some of my families favorite things to top our Potato Chowder with include:
- crumbled bacon
- shredded Cheese
- sour Cream or Greek Yogurt
- cream cheese (garlic & herb is yummy)
- chives or scallions
- parsley or cilantro
- salsa
- pesto
- blue cheese (we like any kind of cheese really)
- croutons or bread but not exactly on top more for dipping
